It would have to be Gordon Tanner, the veteran player. I really got into his character (yes, he's my alter-ego), and enjoyed writing him into the book. Sure Alex Bathgate is the principal character in the book, but without Tanner, there is no team. I like him because he had a big fall from grace, and is trying to make amends back on the pitch the only way he knows how. He is tough, both physically and mentally, and has learned how to survive in prison, yet, at the same time, will try to help his colleagues whenever he can, even if it means putting himself at risk. He is the father figure to the younger players and the man who mostly has to put up with the Warden's rants.
My second favourite would have to be Father Kilkenny, another character which has fallen from grace, and puts up with his job as best he can.
